Kahani’s vivid memories of traipsing through Vietnam have found their way into the creation of this distinctive dish. We’re talking large chunks of succulent pork shoulder slow cooked for four hours in a finger-licking caramel ginger sauce, tossed with Asian-style vegetables and a sprinkling of black rice. It’s vibrant, protein-rich, nutrient-charged, and completed with spring onion and sesame seeds.
Noodles not included.
Serving suggestions: Serve with udon, soba, or rice noodles, or more simply with steamed jasmine rice.
Ingredients: Pork shoulder, bok choy, carrot, red capsicum, black rice, onion, garlic, ginger, fresh red chilli, fish sauce, soy sauce, vegetable oil, sesame oil, chicken stock, dark brown sugar, fresh lemongrass, star anise, cinnamon, lime, spring onion, sesame seeds.
CHILLI CON CARNE
It’s your ever-versatile, ever-favourite chilli con carne but mild (to please the whole family) and with an irresistible twist. The star of the show is a hint of Lindt 70% dark chocolate, adding amazing richness to the juicy, slow-cooked pork and beef mince. She also features antioxidant-loaded red kidney beans, a smoky flavour from cloves, an oomph from char-grilled jalapenos, and a boldness only red wine can muster.
Serving suggestions: This chilli can be served with anything and everything! We love it with nachos, soft tacos, hard shell tacos, and baked potatoes. Get creative or keep it simple with your salad accompaniments, but you certainly can’t go wrong with avo, salsa, and sour cream to balance the mild spice if you need.
Ingredients: Pork mince, beef mince, dark chocolate, jalapenos, onion, olive oil, garlic, sweet paprika, Kashmiri chilli powder, cinnamon, cumin, ground coriander, ground cloves, tomato puree, passata, red wine, chicken stock, red kidney beans, bay leaves, salt, pepper.
SPICED PORK with ROOT VEGETABLES
We like to think this special dish captures the best of both seasons – textures reminiscent of a heart-warming winter stew yet with summery citrus flavours to keep her tasting light and sweet. The large pork shoulder pieces are dry-rubbed with a homemade Moorish spice blend, then slow-cooked for four hours with sweet potato and carrot wedges, halved lemons, red onion, and dried apricots. Topped with fresh mint and vibrant pomegranate seeds for extra bursts of tart freshness.
Please note that we use whole lemons for the extra flavour infusion though this does leave the finished dish susceptible to seeds - perhaps take care if you've got troublesome teeth!
Serving suggestions: Enjoy with a side of couscous or a thick slice of sourdough to sop up the aromatic gravy.
Packet sauce no longer! This cheery family meal not only packs a prime protein punch with a pork, beef and bean combo, but its flavoursome tomato sauce is made completely from scratch (ole ole!). Red onion, zucchini, red capsicum, and corn lend this dish loads of colour, while the traces of lime lingering on each mouthful are super refreshing. Comes with a lime wedge for an extra zesty squeeze over the top.
Serving suggestions: Most definitely serve with an extra squeeze of fresh lime over the top. Extra chopped coriander, a dollop of sour cream, and a corn on the cob wouldn’t go amiss on the side.
Ingredients: Pork mince, beef mince, zucchini, green capsicum, red onion, fresh lime, corn, white flour tortillas, black beans, fresh coriander, mozzarella, vegetable oil, flour, Kashmiri chilli powder, cumin, garlic, oregano, cinnamon, tomato paste, vegetable stock, apple cider vinegar, salt, pepper.
